Pumpkin Pie Oatmeal

Who else is super freakin stoked that summer is FINALLY over and that fall is here?!?!? I know I sure am! Plus the weather has been super nice the last couple of days here in Kansas! It actually feels like fall and it’s fantastic! I sure hope this weather sticks around and that summer is gone for good this year. πŸ˜„

Anyway, since the weather has been cooler I’ve been all about oatmeal! Don’t get me wrong I love oatmeal all of the time, it’s just that sometimes when it’s hot out eating a bowl of oatmeal isn’t exactly satisfying. But it’s just so cozy and filling and perfect for when the weather starts getting colder! Or at least I think so. So I’ve been making my all time favorite oatmeal recipe! Which of course involves pumpkin because it’s fall and literally everything consumed in the fall should contain pumpkin, right? πŸŽƒπŸ˜‰

And why not? Pumpkin is full of all sorts of goodness; potassium, antioxidants, beta-carotene, vitamins C, E, and A, and fiber, among other things. So I say eat all of the pumpkin you want!! Well, maybe notΒ too much. Especially if you eat a lot of other foods that contain beta-carotene like carrots and other kinds of squash. A fun little side effect of consuming too much beta-carotene is that it can give your skin an orange-ish tint. When I was a baby I LOVED things like carrots and squash and I ended up turning orange! Luckily it’s just a temporary thing though, and once you start limiting the beta-carotene it will fade away.

Anyway, lets get to the recipe, shall we?

Pumpkin Pie Oatmeal

Makes 1 Serving

335 calories if made with honey and unsweetened almond milk, but it will vary depending on the milk you use and if you use brown sugar instead of honey.

Ingredients:

  • 1/2 cup old fashioned oats
  • about 1 and 1/2 cups water
  • 1/2 cup pumpkin puree
  • 1/2 cup milk of your choice
  • 2 tbs honey or 1/4 cup brown sugar
  • a pinch of salt
  • pumpkin spice to taste

Ignore my badly opened can of pumpkin haha. πŸ˜‰ So, I like unsweetened, vanilla almond milk, but you can use whatever kind of milk you like.

Instructions:

Add water and a pinch of salt to a pot and bring to a boil on the stove. Once your water is boiling add your oats and pumpkin spice, reduce heat to medium and let the oats cook for 10 minutes. Keep an eye on it though. I’ve found that the cook time can vary depending on the pot you use. A good rule of thumb is to let most of the water cook out and that usually takes around 10 minutes.

Once most of the water has cooked out of your oats add the milk, pumpkin, and honey or brown sugar. (I prefer honey, but every once in a while I’ll use brown sugar and it’s pretty good that way too. πŸ™‚ ). Mix together and let it cook on medium heat for another 10 minutes. Again, keep an eye on it, just in case! Nobody wants burnt oatmeal!

Enjoy immediately!

Rain, Running, and Steaks.

It’s been raining on and off for almost two days now and it’s been fantastic!! And when it hasn’t been raining it’s been cloudy, which has been nice. It’s been a crazy dry, sunny, and hot summer here in Kansas and we’ve needed a break from it!

The only problem with the rain and cloud cover we’ve been having is that it is super humid and sticky out. Still a huge improvement from the weather we’ve been having though. Plus it’s cooled off quite a bit. The highs have been in the mid to high 80’s and that’s supposed to go down even more next week. Yay!!

Haha and the only reason I’m bringing all of this up is because it makes running so much more enjoyable!! On Monday I did my run when it was sunny and probably around 74 degrees out and it felt terrible haha. But yesterday it was cloudy and drizzling when I ran and that made it sooo much better and totally killed my interval workout! Now that I’ve gotten a few of those under my belt they are starting to get more fun. Still hard though, but honestly that’s what makes interval workouts fun. They can be really hard if you want them to be. And yesterday I did. My goal during yesterday’s interval workout was to hurt. Mission accomplished. Haha oh man, I feel like all runners have a little bit of a sadistic streak in them. πŸ˜‰

4 miles. Interval work. Drizzly weather. Sweaty bangs. Tuesday was a good running day. πŸ™‚

Yeah, wanting to hurt and successfully hurting was all fun and games yesterday, but today, well, not so much. Today my legs were sore, tired, and running was not so fun. But I mean, I’d rather have my speed workouts feel good and be fun and then have my easy days feel harder. It’s a lot easier to actually do an easy run when your legs are tired haha! At least I think so. πŸ˜‰ And I did do an easy run today. Although it felt more like a 3 mile slog through cold molasses, while breathing in air that felt like it was more water than oxygen. But it’s done now and my legs will probably feel better tomorrow because of it. πŸ™‚

At least I hope they feel better tomorrow. I’ve got another 5 miles to do and then I get a cross-train day on Friday, so at least I’ll get a day off from running before my long run on Saturday. πŸ™‚ But aside from my legs feeling tired from my interval session yesterday (which I mean, they should. πŸ˜‰ ), I’m feeling pretty good! Tired. But good. So far half marathon training feels like it’s flying by. Sure, I’m only into week 4, but it still feels like it’s going fast. That being said though, I think I’m going to dial things back just a little bit next week. I’m not feeling terrible or anything, but since I keep describing myself as “tired” I feel like my body probably needs a little bit of a chance to adjust to my training and the increase in mileage I’ve been doing. Hopefully that’s all I need and I’ll be able to ramp things back up the week after that. But like I said, I’m still feeling pretty good! No illnesses or injury, and that’s exactly what I’m trying to prevent. Or at least minimize. More likely than not I’ll end up with a cold at some point during cold and flue season, but that’s nothing I wont be able to handle.

But anyway, all of this training has had me craving red meat. That’s a pretty unusual development for me. I’m not a vegetarian or vegan or anything, but I’m really not a big meat eater either. That’s why I’m not a huge fan of grilling season. Everyone is always grilling up a bunch of meat and I get really tired of it really fast. But oh man, yesterday I just needed some kind of meat. Preferably from a cow. So for dinner I cooked up some steaks we had in our freezer, that we got from a local butcher shop like, a month ago.

Yeah, this was exactly what I needed! I actually ate a whole on for dinner last night (again, pretty crazy for me) and then half of one for lunch today and I’m probably gonna eat the other half for dinner. πŸ™‚ I’ve yet to perfect the art of cooking steak, but these did turn out very well! I let them cook on a skillet for about 4 minutes, flipped them for a second, and then finished them in the oven for about 7 minutes. They were seared really well, but still nice and juicy and a little bit pink in the middle. I think I left them in the oven for a minute or two longer than I should have. I would have preferred a little more pink, but still, they were delicious!

We’re gonna have to go back to that butcher shop soon. They are a little more expensive that just getting meat at a grocery store, but it’s worth it! Their meat is so much better. Plus the people who work there are pretty awesome. They have big bulk deals every month but they’ve let us sub out certain cuts of meat for others a few times now and I thought that was pretty cool. In my experience, small, local places are usually better than big, chain stores. Plus I just like the way a good butcher shop smells. Haha it reminds me of deer season and loading up my dad’s cows into his trailer and fresh venison and beef. Those were some good times. πŸ™‚

Anyway, is anyone else super stoked that August is about half way over and fall will be here soon (there are 38 days until the autumn equinox, but who’s counting? πŸ˜‰ )?!? I’m so ready for fall to get here! Hahaha I’ve pretty much been over summer since it started, but at least the weather has been improving a little bit.

Half Marathon Training Day 7 and Everyday Adventures

A word to the wise; never EVER drink a whole medium Oreo chocolate milkshake from Sonic the night before a long run. Seriously, I’m speaking from experience here. DON’T DO IT. 

So yeah, things didn’t exactly go well for me. Mostly because of the milkshake (hey, we ordered smalls!! They were the ones who gave us mediums and of course I had to eat the whole thing. πŸ™„πŸ˜‰). 

Pre long run ritual; breakfast (not pictured), coffee, and some quick reading.

Today was my first long run of half marathon training. It was just supposed to be an hour of easy running (I can usually accomplish a little over 4 miles in that amount of time), but I couldn’t go that long. 

My stomach was already unhappy about the amount of sugar I had ingested the night before, and running in the heat definitely didn’t help that situation. Plus I felt really weighed down and gross. 

Combine that with hills, humidity, and asthma, and I just ended up having a really shitty time. I spent 40 minutes on the road and got 3 miles done then I called it quits and walked home. Haha I still ended up spending an hour moving, then we took the dogs to the park and walked around for a while, so at least there’s that. 😬

When we got home Luke picked a bunch of tomatoes and cucumbers and then he went on a canning/pickling spree.

He picked them a little early, but they ripen in the jar. πŸ˜ƒ


Now we have 7 jars of sweet pickles in the fridge and 2 big ass jars of tomatoes. I think we’re doing good so far. 😁

Once the canning was done, Luke was still in a cooking mood so we headed to the store to pick up some ingredients. Luke decided he wanted to make a pieand I made some awesome meatballs. It made for a super tasty dinner. 

After dinner and a movie (finally got to watch Dead Pool! Loved it!!) we went out on a super long Pokemon hunt. We walked around for a little bit, played on a swing while running a lure, then hung out at a gym for half an hour and stole it back from someone who was trying to take it down. Twice. πŸ˜ƒπŸ˜ƒπŸ˜ƒ

Aaaand that’s what we’re currently doing, and probably will be doing for a while, so peace out for now. ✌🏻️
