Oatmeal Breakfast Bites

I absolutely LOVE these things! They are one of my favorite make-ahead breakfasts. They also make great snacks!

As I was making them last night I decided I need to share the recipe here because they are super easy, yummy, and healthy.

Recipe: 

  • 3 over-ripe bananas
  • 3 cups old fashioned oats
  • 2 eggs
  • 1 cup vanilla soy milk (although any kind of milk would work)
  • 1 tbs baking powder
  • 1/4 cup honey (or a little bit more or less depending on how sweet you want them)

Preheat oven to 350 degrees.

Blend all ingredients in a blender (you can totally skip this and just mash the bananas then mix  everything in a large bowl. I just like the texture when they are blended).

Pour batter into greased cupcake pan.

Add in any extras (blueberries, chocolate chips, nuts, etc.)

Bake for 20-30 minutes. They should be firm to the touch.

Let cool (they stick to the pan really bad when they’re still warm), then remove and enjoy!  

The fun thing about these is you can add pretty much anything you want (or just leave them plain, I like them that way 😉). I’ve added chocolate chips, berries, even pumpkin purée and they alway turn out super yummy!

      Same here! That’s why I like to have things like this around so I don’t have to really think about it haha. That usually ends with me trying to justify junk food. 😝

    I just made these yesterday and put nuts in them to give them some texture. One of these were perfect before my swim this morning. Thanks for sharing!
